Iβd choose Filipino cause Iβm asian.
you can follow a more simple recipe of Longanisa (Filipino sausage). just get some minced meat, add sugar and either garlic power or minced garlic, salt and pepper, put in it in the casing and you're done. That's basically the most common recipe sold on wet market because let's be honest, most meat dealer who makes lonagisa here in the philippines makes longanisa out of left over meat so that they wont go to waste.

Great vid! You can also get pre-made tocino and longanisa that's pretty good. Filipinos also make awesome corned-beef hash. Good call on the Silver Swan, too — it's the best soy sauce around for cooking.
